The Prowling Demon (aka Titanite Demon) is an optional boss fight in the Undead Parish. Located just past the first Blacksmith, the Titanite Demon stands between you and the entrance to Darkroot Garden.
He is also found four more times during the game: in the pit of Sen's Fortress, once in a small room in Anor Londo, once in the Catacombs and guarding the entrance to Lost Izalith. Each sighting is an optional fight encounter. He drops Demon Titanite; additionally as a rare drop he can drop the Titanite Catch Pole, which is the weapon he uses.

The Demon who guards Lost Izalith is slightly different from the others as he respawns each time you touch a bonfire. Since this version of the Prowling Demon drops two demon titanite upon death it is possible to farm this valuable resource from the Demon.

Fight Strategy
It's not uncommon for many players to fall at the first hurdle when fighting the Titanite Demon, as as soon as he spots you he will begin to hurl deadly lightning bolts in your direction. He will do this whenever you are a certain distance away, so it is best to close the gap quickly as soon as you spot the Titanite Demon.
When you're closer to the Demon he will perform melee attacks using his Titanite Catch pole and his actual body. It is best to keep moving around the demon with your shield up during these attacks; try to keep behind the demon and attack his back, taking regular breaks to block any of his attacks as necessary. His melee attacks do have considerable range, so it is best to block them or try to roll through them.
Despite the dangerous range of the attacks the Titanite Demon is slow and somewhat cumbersome. Like we said previously: keep moving and block whenever is necessary.
Despite using lightning attacks in his repertoire the Titanite Demon is also seemingly weak to the element. Weapons enchanted with a lightning property will be a great help here, so equip your lightning spear or something similar before going into the fight.
There are a number of effective ways of bringing him down:
If you stay just in front of his left arm his attacks miss more often. You'll need to equip a sturdy shield for this fight as some of the attacks can break straight through your stamina, leaving you open for another hit.
If you need to heal move behind him, knock back an estus flask, then quickly get back to his front. If you stay behind him for too long he will jump and pin you to the ground, causing massive damage. Rinse and repeat and he should go down fairly quick.

If you've fought the Demon a few times before and learned to expect his crush attack it's also generally quite easy to dodge. To make life easier make sure you're locked on to the Demon, and when he leaps up, retreat away from where he should land, rolling away quickly if possible. If you've done it right he should completely miss you and you can resume blocking/attacking.
His melee attacks are very easy to dodge as long as you aren't in front of him. He's weak against lightning, so use Gold Pine Resin which will imbue your weapon temporarily with the power of this element. Just remember to keep attacking and flanking, patiently blocking his attacks and getting in a hit when you can.
Ranged Strategy
As we mentioned previously the Titanite Demon will attack with bolts of lightning when you stray too far from him, but if you're fighting in a nice wide space his attacks are reasonably easily dodged, particularly if you've studied the animation for a while.
If you have a character with a ranged build you can probably stand far enough away from the Demon that the lightning is easily visible and easily dodged, shooting the Demon in between his attacks. You should have more than enough time to get a few attacks in every so often, and this is an effective strategy of sending the Demon straight to his demise.
Undead Parish Fight
The following strategy is for the Undead Parish Prowling Demon fight only.
The two sets of stairs in the room are also able to be used to your favor; either lead him up to the stairs in the front or run down to the stairs behind him. If you keep him at the top of the stairs, you should be able to stay on the stairs just beneath him and his melee attacks will swing over your head.
Lost Izalith Strategy
In Lost Izalith, run behind the Prowling Demon as far as possible and he'll turn around, leaving his back exposed.
Sneak up on him or use the Slumbering Dragoncrest Ring to keep from being heard. After sneaking up on him, two-hand a strong weapon or use strong pyromancy or spells, hit then run all the way back until he turns around again.
If you have a Dragon Slayer Bow and Dragon Arrows, this Boss is very easy to beat from range as the bow will clip his health over 300 a strike. Rinse and repeat until he dies.
